-Set an oven thermometer on the side that has the gas on so you can have an idea of what the temperature on the grate is at meat level. this can vary greatly from the top to the middle of the grill where most installed thermometers are already set on the grill.
-For gas grills, get an aluminum wood chip smoker to add flavor to all your grilled meat.
-Always soak your wood chips for at least an hour prior to cooking to keep them from burning up to quickly. Try soaking them in something other than water, like wine or beer or vinegar.
-The Sauce you use can make or break a B-B-Q and might be the most important part of the meal. Don't be the guy who uses a store bought BBQ sauce. Making your own will be rewarding, taste better and will impress your guests.
