Gas grill indirect smoking/cooking

-First you must have a double sided grill. Turn one side on low and leave the other side off. Place the meat on the side without the gas burning and place your wood chip box over the side with the gas on. This is a  very easy method and can be used for boston butts etc. The down side to this is that it is hard to keep a temp very low because the grills lowest setting will still have the temp at 275 or greater. This is not bad but not ideal.

Charcoal grill indirect smoking/cooking

-Take 20 to 25 coals and pile them all on one side of the grill. Then take 5 to 10 coals, soak with lighter fluid and light on the other side of grill so they are not touching the other pile. Let the coals get to a normal white that tells you they are ready. Then take a small shovel or somthing to scoop the hot coals and place on top of the other unlit coals. This will give you a fire that will last a long time because they will slowly catch the other coals on fire and wont make the grill too hot. Cook the Meat on the other side of the grill. For a longer cook, add more coals on the unlit side.
